Rice Pizza Skillet Dinner

The photo doesn’t look like much, but it was quite delicious! It’s amazing how exciting and relaxing cooking has been for me this week, as I recover from tonsil surgery and am able to appreciate solid foods again! I would HIGHLY recommend this delicious skillet dinner, feel free to alter as your tastes desire!

  • 1 Cup Brown rice
  • Olive Oil
  • Vegetables – I used sliced green pepper, broccoli, zuchinni, and chopped garlic
  • 1 Can Diced Tomatoes
  • 1/2 c. Chobani Plain Greek Yogurt
  • Mozzarella or other white cheese, shredded
  • Pizza Spices
  1. Prepare rice according to package directions
  2. Cook vegetables in skillet with a little olive oil
  3. Add rice, tomatoes, yogurt, cheese and any other pizza-type ingredients.
  4. Heat, Stir, and top with more cheese to enjoy!
