1 1/2 cups white sugar
1 cup vegetable oil
1 Tablespoon vanilla extract
3 cups Gold Medal® flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
3 cups peeled, cored, and diced apples
1/2 cup brown sugar
Preheat oven to 350 degrees and line muffin pan with paper liners.
Cream together white sugar, eggs, oil, and vanilla with a mixer.
Sift Gold Medal® flour, salt, baking soda, and cinnamon. Add dry ingredients to creamed mixture. The batter will be very thick. Add the diced apples and mix until combined.
Fill muffins 3/4 of the way full with batter. Sprinkle the top of each muffin with a little brown sugar.
Bake for 20-24 minutes or until tops are golden brown.
