Penne w/ homemade sauce and feta


2 c. Whole grain penne
1 Can of whole tomatoes, undrained
1 T. ish of pre-minced garlic
Italian Seasoning
a few spinach leaves
a bit of Feta cheese

The path to this easy, tasty, nutritious meal is after the jump!

  1. Prepare pasta according to directions.  Drain and return to pot.
  2. Sauce: Put tomatoes, seasonings, and garlic in your food processor.  Mix it up for a few seconds and add to drained pasta.
  3. Heat it up, throw in a few torn up spinach leaves.
  4. Top with Feta

Improvements for next time: There is probably a way to thicken the sauce a bit, especially since I didn’t drain the canned tomatoes.

Serves: Two (I only made 1 c. pasta for myself and saved some sauce for later!)
